Chai Vanilla Cake – Recipe & Wedding Story

My bride-to-be friend wanted her wedding to be unique, like most brides these days. Instead of 3-5 bridesmaids, she had two sisters standing with her at the altar and 15 ‘friends of honor’! This was something I had never seen before, but it worked really well. We bought the exact same cowboy boots (Coconuts brand) and all wore pink dresses. She also asked us all to bake a cake.

Some cakes were extremely fancy with chocolate ganache and perfect frosting decorations. Some were simple vanilla Funfetti cakes. Mine was in the middle – fancy flavor, but simple presentation. It was the first double layer cake I had ever made. I used the Sky High cake recipe and it was delicious! The only difference is I bought cream cheese frosting because I was running short on time. I made the cake on my lunch hour, my roommate took it out of the oven to cool for me, and I frosted it that night. Once frosted, I fastened my cake carrier and took it to my friend’s house for the night so we could leave early in the morning for the wedding.

Of course once I arrive at her house, the carrier bottom unlatches and the cake falls top-down on her floor!!! I was freaking out, but decided to salvage it. About 1/4 of the top hit the floor so I scraped all the frosting off the top, cut some of the cake top off, and re-frosted it. Ooooppss. Apparently no one at the wedding could tell though, because every bit of it was eaten the next day at the wedding! I’d say it was a success, despite the unfortunate spill.

  1. What a cute idea! Nice save on the cake. I have a perfect track record for messing up cupcakes. They still taste good anyway! 😉
