Pumpkin No Bake Cookies
My roommate made us garlic spaghetti for dinner, so I made dessert! I think my task was a lot easier with this simple recipe.
Ingredients:
1 cup pumpkin puree
2 TBSP cinnamon
1 tsp nutmeg
1 tsp cocoa powder
1/3 cup brown sugar
1/4 cup powdered sugar
4 TBSP butter
1/2 cup skim milk
2 tsp vanilla extract
1/2 tsp sea salt + more for topping
3 cup oats
Directions:
Add all ingredients in the order listed above, except oats, in saucepan over low heat. Stir until smooth, making sure sugar is fully dissolved. By adding each ingredient at a time you will slowly simmer them all together. Stir in oats one cup at a time until completely covered in pumpkin mixture.
Place spoonfuls onto tin foil or parchment paper and sprinkle with sea salt. Let them cool to room temperature for about an hour or place in refrigerator until cool.
