Marbled Pumpkin Cream Cheese Bars – Healthier Version

Every fall I want to eat pumpkin every day – or get a pumpkin spice latte. I try to make dessert recipes a little healthier by cutting back on the sugar and fat, if possible. This is slightly better for you than traditional marbled pumpkin cream cheese bars.

Ingredients:

  • 1 cup of flour
  • 3/4 cup packed brown sugar
  • 1 1/4 cup canned pumpkin
  • 1/2 cup softened butter
  • 2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 8 oz softened cream cheese
  • 1/4 cup sugar
  • 1/4 olive oil
  • 2 tsp flour
  • 1 tsp vanilla
  • 2 eggs
  • A few tsp of powdered sugar, if needed.

Recipe

  1. Heat oven to 350*. Grease rectangular pan, inches 11 x 9 x 2.
  2. Beat 1 cup flour, brown sugar, pumpkin, 1/2 cup butter, cinnamon, baking powder, ginger, baking soda, salt, and 2 eggs in a large bowl with a hand mixer at low speed. Scrape constantly until well blended.
  3. Pour pumpkin mixture in greased pan.
  4. In empty large bowl, mix remaining ingredients with a hand mixer at low speed until well blended.
  5. Spread cream cheese mixture over pumpkin mixture in glass pan.
  6. Swirl and cut through pumpkin and cream cheese mixtures with a knife for a marbled effect.
  7. Sprinkle with powdered sugar, if you want, and enjoy!
