Marbled Pumpkin Cream Cheese Bars – Healthier Version
Every fall I want to eat pumpkin every day – or get a pumpkin spice latte. I try to make dessert recipes a little healthier by cutting back on the sugar and fat, if possible. This is slightly better for you than traditional marbled pumpkin cream cheese bars.
Ingredients:
- 1 cup of flour
- 3/4 cup packed brown sugar
- 1 1/4 cup canned pumpkin
- 1/2 cup softened butter
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp ground ginger
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 8 oz softened cream cheese
- 1/4 cup sugar
- 1/4 olive oil
- 2 tsp flour
- 1 tsp vanilla
- 2 eggs
- A few tsp of powdered sugar, if needed.
Recipe
- Heat oven to 350*. Grease rectangular pan, inches 11 x 9 x 2.
- Beat 1 cup flour, brown sugar, pumpkin, 1/2 cup butter, cinnamon, baking powder, ginger, baking soda, salt, and 2 eggs in a large bowl with a hand mixer at low speed. Scrape constantly until well blended.
- Pour pumpkin mixture in greased pan.
- In empty large bowl, mix remaining ingredients with a hand mixer at low speed until well blended.
- Spread cream cheese mixture over pumpkin mixture in glass pan.
- Swirl and cut through pumpkin and cream cheese mixtures with a knife for a marbled effect.
- Sprinkle with powdered sugar, if you want, and enjoy!
