Chocolate Protein Baked Oatmeal – Breakfast Recipe

Getting up early and having a daily commute doesn’t allow much time for breakfast. So on Sundays I prep for the week by making healthy breakfasts and lunches ahead of time. Here’s the recipe I made today. I like to start my day with something nutritious and filling, so the protein and oats will take care of that. I will use a spoon to eat this baked oatmeal breakfast, but if you use less milk it could be handheld breakfast bars.

Chocolate Protein Baked Oatmeal

Ingredients

  • 2 ripe bananas, mashed until smooth & creamy
  • 1/3 cup peanut butter – creamy or chunky
  • 2/3 cup nonfat milk
  • 1 scoop chocolate protein powder
  • 1 tsp vanilla extract
  • 1 1/2 cups steel cut oats – half cooked (Let oats simmer for 10 minutes instead of 20 minutes)
  • 2 TBSP flax seeds
  • 2/3 cups chocolate chips

Directions

  1. Preheat heat oven to 350 degrees.
  2. In a large bowl, mix mashed banana & peanut butter until completely combined.
  3. Mix the milk and protein powder in a glass and pour into the bowl.
  4. Add in the half-cooked oats and the rest of the ingredients to the banana mixture and mix well.
  5. Pour batter into a well greased 13×9 in glass pan.
  6. Bake for 30 minutes.
  7. Let cool and then slice.
