Great Grandma’s Refrigerator Pickles Recipe

We grew pickling cucumbers in our garden this year. We should have picked them a lot earlier, but they still taste good. Since they grew so big, I decided to make refrigerator pickles, rather than canning them. I remember my mom making these when I was a kid from my dad’s grandma’s recipe. I love pickles and although these taste different than store-bought, jarred pickles they are really tasty. The recipe I have in an old family cookbook says, “Recipe from Terri”, but I’m pretty sure it’s the same refrigerator pickle recipe. Either way they taste so good!

INGREDIENTS

4 cups of water

3 cups of vinegar

3 or 4 heaping tablespoons sugar

1 medium onion

INSTRUCTIONS

1. Peel and cut cucumbers in chunks (you can see I didn’t peel mine and since they are a little overripe, they are more yellow).

2. Put in 2 jars or a big bowl with dill and onions, also cut into chunks.

3. Keep in refrigerator for 4-5 days.

4. Enjoy! They last a long time in the fridge with the vinegar preserving them.
