Pineapple Bread Recipe

This bread sounded so delicious for breakfast with a pat of peanut butter or for lunch with ham. It tastes delicious, but didn’t look very pretty. I think next time I will add a little more yeast (maybe 1/2 a teaspoon) to make it rise better and a little more butter (1/2 a tablespoon) so that it doesn’t crumble as easily when I cut it. Also, I really need to buy a good bread knife.

Pineapple Bread Recipe for Bread Machine

Ingredients

  • 1 cup warm pineapple juice (70 to 80 degrees F)
  • 2 tablespoons water (70 to 80 degrees F)
  • 1 egg
  • 1 tablespoon butter or margarine, softened [ADD 1/2 TBLSP]
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 3 1/4 cups bread flour [or white whole wheat flour]
  • 2 1/4 teaspoons active dry yeast  [ADD 1/2 TSP]
  • 1/8 cup finely chopped candied pineapple

Directions

  1. In bread machine pan, place the first eight ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before final kneading (your machine may audibly signal this), add the pineapple if desired.

Notes

If your bread machine has a time-delay feature, we recommend you do not use it for this recipe.

I used the “sweet bread” cycle with “light crust”. This recipe did not allow the bread to rise properly although the crust was dark. I suggest adding 1/2 TBLSP yeast and 1/2 tsp of butter.
