3 Meals from 1: Pizza, Spaghetti, Stir Fry
Last week I made Rachael Ray’s Meatball Pizza when my little sister visited. She loves to cook so I told her to pick out a recipe while I was at work and we would make it for dinner that night. Karissa picked a delicious recipe that ended up leading to new dinners!
We doubled the recipe so we could have leftovers for lunch that week, plus there was about a pound of extra “meat mixture”. Rachael Ray uses ground sirloin, but we used organic ground turkey.
I froze the meat mixture and used it the following week for an amazing spaghetti sauce. All I did was add a jar of tomato basil sauce and let it simmer while the noodles cooked. This time I made extra noodles to use in the next night’s dinner, which was last night.
For the stir-fry I put a little olive oil in a pan and heated some frozen stir-fry veggies. I put the veggies to the side and fried two chicken breasts cut in to chunks. Then I mixed the veggies, chicken, and leftover noodles in a pan. I added some low-sodium soy sauce, cilantro, pepper, and garlic. Voila – quick chicken stir fry!
I wrote the Meatball Pizza recipe in my recipe book with my changes (the biggest being turkey instead of sirloin). At the bottom I made a note to make extra meat and freeze for a yummy, cheesy, spaghetti sauce.
There is nothing better than having such a versatile recipe that allows for multiple different meals. It really helps with a busy family. Thanks.
