Zucchini Parmesan

I FINALLY got around to making this delicious dish. This has been a hectic week to say the least.
On Tuesday I was going to make this dish, but I had to rush over to our neighbor’s house for a doggy play date. We had scheduled it for that night, I just didn’t realize she went to bed at 7pm! So by the time I got home at almost 8pm (she stayed up later since I came over “late”), it was too late to cook this already prepared meal.

Maybe letting it sit in the fridge for a few days covered in tin foil made it taste better! I guess I will have to make it again the right way some day and compare.

Here’s a picture of my partial zucchini club. I set a large envelope by it so you can tell how big it is. I had already used some of it for sautéing a few days before I made this dish.

    I’m so glad you enjoyed this. I use the same basic recipe for eggplant and yellow squash too. It’s fabulous!
